With the skis, I wouldn't bother with the docking—go to the east side just beyond the small island and pull right up to the beach. The water is clear enough to see the rocks you'll have to navigate.
The west side is fine but, as you mentioned, is more exposed—it's fun to ride the rollers there, though, so as long as you've got a solid anchor (like the Mantus dinghy anchor), you'll be fine. No stern anchor necessary as the wave action keeps it angled toward shore.
In terms of activity: if you're looking to stand in the water sandbar style or walk the island, east side. If you actually want to swim, west side.
