Default I don't get it

I don't quite understand the mentality of some businesses. When the Wining Butcher had the original owners running it and just one or two stores the quality, service and prices were all great. Once they expanded the prices went out of sight and the quality went down hill.

The same thing has happened at Lakeside Roast beef. When it was Dave with one store the quality was super, the prices fair and the service excellent. Now they have 3 restaurants and the prices are sky high with portion sizes much smaller and a staff that doesn't seem to care. I stopped going there because of this, and I know others who feel the same way.

It will be interesting to see what happens at both establishments over the winter now that the summer vacation trade is gone and the locals who tend to be more price conscious are the only customers. Will the prices come down to a reasonable spot or will the two places become ghost towns for the winter season?
