I can cook omelets as well, and always thought I would love to work in a restaurant kitchen. That is, until I started cooking omelets at our monthly breakfast buffet, and then found out the two hour prep, and flipping pan cooked omelets for about 3 and a half hours, once a month, was just about enough.

) is off to all those who slave in a kitchen, whether it is breakfast, lunch or dinner.
