VERY interesting. I Now know why my Filet is only
just good and not very good or excellent. I only paid $23 a pound at the supermarket... Vs. $65 a pound from the specialty mail order place linked above. Maybe I'll see if I can find an old fashion butcher shop or strictly meat market.
